Yields 16 jumbo gummies
- 1 cup frozen wild blueberries (any chopped fresh or frozen fruit will work)
- ½ cup canned full fat coconut milk
- 1 tbsp lemon juice
- 2 tbsp gelatin powder
- 2 tbsp raw honey
- If using candy molds, place them on a cutting board that will fit in your fridge for easy transferring.
- Add fruit, coconut milk and lemon juice to the blender. Puree until smooth.
- Transfer to a small sauce pan and warm over low heat.
- Add gelatin and stir until dissolved. Do not let boil or gelatin will clump.
- Remove from heart and stir in honey.
- Pour mixture into candy molds or a 9x9 glass dish.
- Refrigerate for an hour.
- Remove from molds or cut into desired sized gummies in dish.
- Store in an airtight container in the fridge for up to 7 days.
I use Great Lakes Gelatin and purchased it on Amazon -- along with the candy molds.
